What better way to embrace fall than with some pumpkin seeds sprinkled into a delicious and simple recipe?
This Jicama and Pumpkin Seed Slaw is not only packed with crunch and flavor, but it’s also bursting with heart-loving, gut-nourishing ingredients. And the best part? It only takes three steps to make!

Let me introduce some of my favorite ingredients in this dish, which will leave you feeling nourished, energized, and grounded!
Jicama
I’ve always loved jicama for its crisp texture and slightly sweet flavor. This root veggie, often used in Mexican cuisine, is loaded with vitamin C and fiber, which are both incredibly important for heart health. The vitamin C in jicama does wonders for your skin and eye health too!
Jicama also contains inulin, a prebiotic fiber that feeds the good bacteria in your gut, helping to promote digestion and boost immunity. This is a huge plus since gut health is important for your heart and brain health- they are interconnected as your heart, brain and gut are the “three brains.” Your gut health is closely connected to overall well-being—including your emotional balance.
Red Cabbage
Cabbage has always held a special place in my heart (and my meals!). Red cabbage, in particular, is one of my go-to cruciferous veggies. It’s packed with both soluble and insoluble fiber, which not only supports your gut health but also keeps your heart in check.
The fiber helps lower cholesterol and promotes a healthy gut microbiome, which in turn nourishes your entire body.
And did you know that cabbage is a natural stress-buster? Studies show it can help lower cortisol levels, the hormone associated with stress, giving your body the ability to relax and reset—something we all need during the busy fall season! The calmer we are, the more easily we can lead with our heart in our everyday lives!
Pumpkin Seeds
I can’t think of a better fall ingredient than pumpkin seeds! This Halloween, we roasted so many pumpkin seeds. It was a warm fall, so after a few days of carving our pumpkins they got moldy, hence the multiple rounds of pumpkin-carving, and the many rounds of making roasted pumpkin seeds!
They are one of the best sources of magnesium, which is essential for maintaining healthy heart rhythms, relaxing muscles, and even helping you sleep better. I always sprinkle them into my meals this time of year to get that extra heart-loving boost.
Jicama and Pumpkin Seed Slaw
This makes a beautiful, big salad to share with friends and family. And as your heart opens, and you feel more and more stable and peaceful in your own heart, you will want to simply share and support others, as a natural offshoot of your heart’s awakening power!

Course Dressing, Entree, Main Course, Salad
Servings 6 people
Ingredients
Dressing
- 3 Tbs. almond or cashew butter
- 5 Tbs. fresh lime juice
- 1 zest of lime
- 1 Tbs. apple cider vinegar
- 2 Tbs. olive oil
- 1 pinch of sea salt
- A bit of water as needed, to thin out the dressing
Slaw
- 1 large jicama, peeled and cut into matchsticks (makes about 4 cups)
- ¼ medium large cabbage, thinly sliced (makes about 2 cups)
- 1 medium fennel bulb, cored and thinly sliced
- 3 red radishes, shaved
- 1 pinch of sea salt
- 1 large avocado, pitted, peeled and sliced
- 3 Tbs. pumpkin seeds
- 2 cups fresh cilantro leaves
Instructions
Stir together the dressing ingredients in a small bowl. If the almond butter you used is quite thick and you need to thin the dressing out a bit, add 1 Tbs. at a time of water to thin it out, mixing well.
In a large bowl, toss together the jicama, cabbage, fennel, radishes, sea salt. Add the dressing and mix well.
Top with the avocado, pumpkin seeds and cilantro leaves arranged nicely on top, and serve.
